Ease: 3.5/5. If you don't get pre-grated cheeses it adds to the prep time.
prep time: 5mins to prepare ingredients and wash baby spinach.
cooking time: 8mins. 5mins to cook cheese and spinach, and 3mins to brown quesadillas.
Taste: 4/5. I really enjoyed these but Ryan found them too salty (probably the feta and salt sprinkled on the spinach). I would increase the amount of cheese next time as I like mine extra cheesy. Didn't use the taco sauce, or the eggwhites to seal the edges.
Would I make it again: Yes. Great for lunch.
